ORANGE GLAZE PREP TIME 20 mins COOK TIME 1 hour 30 mins SERVINGS 15 INGREDIENTS 4.5 kg ham cooked on the bone 1 cup maple syrup ½ cup orange juice ¼ cup Dijon mustard ¼ cup English mustard 2 tbsp Brown sugar Cloves Salad greens, to garnish INSTRUCTIONS 1. Preheat oven to 160°C bake. 2. Remove the skin from the ham to leave an even layer of fat. With the tip of a sharp knife, score the fat in a diamond pattern and stud the diamonds with cloves. 3. Mix the orange juice, maple syrup, sugar and mustard in a medium-sized saucepan over a high heat and whisk to combine and brush over the ham. 4. Bake at 160°C allowing 20 minutes per kg, brushing with glaze every 15 minutes. To glaze and serve cold, bake at 180°C for 35-40 minutes, brushing with glaze every 15 minutes. 5.
