Serves: 10 Time to Prepare: 60 Minutes Time to Cook: 45 Minutes Method 1. Finely dice the onion and carrots, then cook them in a pan with a very small amount of oil until soft before taking it off the heat. Add the garlic, stir, and place to one side. (IMPORTANT: for food safety sake please ensure the mix above is room temperature BEFORE mixing it in with the raw meat). 2. Once cooled, add the soft vegetables to your pork mince and unmade stuffing. Add a small amount of bouillon and cracked black pepper for flavour – mix well. 3. Remove the sheets of puff pastry from the freezer and allow to soften slightly. Once ready, cut the puff pastry sheets in 1/2 lengthways. 4. Divide your sausage mix into the required amount of cut pieces of puff pastry and lay the pastry out. 5. Brush each cut piece of pastry with cold water, then roll each of the sausage mixes into long tube shapes and lay it down the length of pastry along the edge. 6. Gently roll the pastry until the pastry has rolled over itself. 7. Lay the rolls on an oven tray lined with parchment paper. 8. Bake in the oven at 172c / Gas mark 4 - until golden brown and reaching a core temperature above 75c. 76
